Let vanilla ice cream sit on the counter for 10-15 minutes - enough for it to be a little malleable
While the ice cream is sitting out, melt the chocolate chips. If wanting to make a mint chocolate shell for the cookie, pour 1/2 TSP peppermint extract per 1 cup of chocolate chips (melted) and stir well - but the peppermint is optional
Sandwich a scoop of vanilla ice cream between 2 cookies, press down, and using the back of a spoon, smooth out the edges
Quickly dip half of the cookie sandwich into the melted chocolate, then lay it on a baking sheet prepped with parchment paper
Let sit for 2-3 minutes, and sprinkle flaky salt on the chocolate
Repeat for however many cookies you’re making
Place the ice cream sandwiches in the freezer for 15-20 minutes, until the chocolate shell is hardened and the ice cream is not too soft or melty
Take them out of the freezer and enjoy them immediately!
