One thing about me? I love nachos. Like, I’m pretty sure at one point in my 20’s I ate nachos every day for an alarming amount of time. Anyways, like everything else I love- I reeeeally find joy in putting a twist on them. These are easy, delicious, and everything I used was store-bought so I whipped them up in no time! I used rotisserie chicken, bottled buffalo sauce and ranch, and blue cheese crumbles. I used them in the nacho mixture and sprinkled some extra crumbles on top to really bring home the fabulous blue cheese flavor. You’re going to love these – let me know what you think! 

INGREDIENTS:
4 cups cooked, shredded chicken (I used store-bought rotisserie)
1/2 cup Buffalo sauce
1/2 cup ranch dressing
Hot sauce, to taste
1/2 cup blue cheese crumbles, plus more for topping
Tortilla chips
1 cup shredded pepper jack cheese
Chopped scallions for garnish
Drizzle of creme fraiche

DIRECTIONS:
Preheat oven to 400 degrees. Mix chicken, Buffalo sauce, ranch, hot sauce, and blue cheese crumbles together. Spread tortilla chips onto a baking sheet, then top generously with shredded pepper jack. Spoon the chicken mixture over the top and bake for 5-10 minutes, until perfectly bubbly and browned to your liking. Remove from the oven, top with more blue cheese crumbles, drizzle with creme fraiche and scallions.
