A little bit of this, a little bit of that, and a very happy hour.

I’ve said it before and I’ll say it again: not every gathering needs a recipe. Sometimes it just needs a really good snack plate and a bottle of rosé.
This is one of those “walk around the kitchen and see what you’ve got” situations. A little prosciutto, creamy buffalo mozzarella, citrusy Castelvetrano olives, sweet Peppadew peppers, peperoncini, juicy tomatoes, and a pile of crunchy taralli. Is there a formula? Not really. The only requirement is that everything looks abundant enough to make people think you really have your life together.
I make versions of this all the time because entertaining doesn’t always have to mean cooking. In fact, I think some of the best happy hours happen when you simply open a few really good things, pour a glass of wine, and let everyone graze. Somehow those are the nights that last the longest.
So consider this less of a recipe and more of a gentle reminder: buy the good olives, keep a few happy hour staples in the fridge, and never underestimate what a beautiful snack plate can do for an ordinary Tuesday.
