By the way, I’m not exaggerating. I don’t even *attempt* to make anything else! This is a “recipe” that we have been making for years, and it’s become something our friends & family look forward to at the end of dinner, because they know it’s coming.

Ingredients

Icecream
  • Vanilla ice cream - left at room temperature for 10 minutes
  • Crumbled Biscoff Cookies or Gingersnaps
  • “Very Sweet Sherry” - I’m using Lustau Pedro Ximenez San Emilio Amarena Cherries
Garnish
  • Mint spring for when you want to look boujee, optional

Method

  1. Remove the ice cream from the freezer and allow it to soften at room temperature for about 10 minutes, until scoopable but not melted.
  2. Scoop the ice cream into individual serving bowls or glasses.
  3. Sprinkle crushed Biscoff cookies generously over each serving.
  4. Top with Amarena cherries and spoon over a little of the cherry syrup.
  5. Drizzle lightly with sweet sherry, adjusting the amount to taste.
  6. Serve immediately.

Notes

This dessert is best assembled just before serving to preserve texture. Use a light hand with the sherry at first; you can always add more. For a more dramatic presentation, layer ice cream, cookies, and cherries parfait-style in glasses.
