By the way, I’m not exaggerating. I don’t even *attempt* to make anything else! This is a “recipe” that we have been making for years, and it’s become something our friends & family look forward to at the end of dinner, because they know it’s coming. This dish is no bake, no fuss and you can keep all of the ingredients on hand to whip out at any point! It’s delicious, and something everyone will rave about.

Ingredients You’ll Need

Ice Cream Base

  • 1–1.5 litres good quality vanilla ice cream, slightly softened (about 10 minutes at room temperature). I love the vanilla bean ice cream from Trader Joe’s.


Mix-ins & toppings

  • 6–8 Biscoff cookies (or gingersnaps), lightly crushed
  • Very sweet sherry, such as Pedro Ximénez
  • Amarena cherries with syrup, to taste


Optional

  • Fresh mint, for garnish

Ingredients

Icecream
  • Vanilla ice cream – left at room temperature for 10 minutes
  • Crumbled Biscoff Cookies or Gingersnaps
  • “Very Sweet Sherry” – I’m using Lustau Pedro Ximenez San Emilio Amarena Cherries
Garnish
  • Mint spring for when you want to look boujee, optional

Method

  1. Remove the ice cream from the freezer and allow it to soften at room temperature for about 10 minutes, until scoopable but not melted.
  2. Scoop the ice cream into individual serving bowls or glasses.
  3. Sprinkle crushed Biscoff cookies generously over each serving.
  4. Top with Amarena cherries and spoon over a little of the cherry syrup.
  5. Drizzle lightly with sweet sherry, adjusting the amount to taste.
  6. Serve immediately.

Notes

This dessert is best assembled just before serving to preserve texture. Use a light hand with the sherry at first; you can always add more. For a more dramatic presentation, layer ice cream, cookies, and cherries parfait-style in glasses.

If dinner has to happen but I refuse to dirty every pan in my kitchen... this one-pot chicken & orzo is the answer. It’s packed with artichokes, olives, feta, fresh herbs, and so much flavor (thanks to Knorr Granulated Chicken Bouillon). 

Save this one for the next “what’s for dinner?” emergency. ✨

INGREDIENTS:
1 teaspoon Knorr Granulated Chicken Bouillon 
3 tablespoons olive oil
1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon dried oregano
1 teaspoon kosher salt, plus more to taste
Coarsely ground black pepper
1 (14-ounce) can quartered artichoke hearts, drained
3 garlic cloves, finely chopped
Pinch of crushed red pepper flakes
½ cup dry white wine
4 cups chicken broth
8 ounces orzo (1¼ cups)
½ cup pitted green olives, coarsely chopped
½ cup finely chopped dill or parsley, plus more for serving
2 teaspoons finely grated lemon zest plus 2 teaspoons lemon juice, plus more to taste
½ cup crumbled feta cheese

How do you prefer your marg?? On the rocks or frozen?!

INGREDIENTS:
1 bottle of Rosé
10 ounces blanco tequila
8 ounces lime juice 
6-8 ounces agave syrup (taste as you go to get it where you like it!)

DIRECTIONS:
Add rosé and tequila into a pitcher. Stir together lime juice and agave syrup, then add into the pitcher. Throw in some ice, then stir again. Rim your glasses with agave and sugar (or salt if you prefer.) Pour into prepared glasses and enjoy!
