Lemony Arugula Cacio e Pepe

Share:

Dinner

LEMONY ARUGULA CACIO E PEPE✨??

Listen – there are FEW things in my life that I love as much as I love this pasta dish. Ok that’s dramatic but you get the point. I grew up eating traditional Cacio e Pepe, but when I was introduced to the lemon + arugula element a la @cravingsbychrissyteigen – I was hooked. I’ve essentially tweaked her recipe just a little bit, and it’s pretty perfect I gotta say. Hope you enjoy this one as much as I do! ✨??

INGREDIENTS:
Kosher salt
12 oz dried spaghetti
1/4 lb pancetta or GOOD bacon, finely diced
1/4 cup EVOO
3 TBSP minced garlic
1 TSP red pepper flakes, plus more to taste
2 TSP freshly ground black pepper, plus more to taste
1/2 cup fresh lemon juice
Lemon zest
2 cups of freshly grated Parmigiano-Reggiano cheese, plus more for serving
2 cups of freshly grated Pecorino Romano
3 cups baby arugula

Cook Along With A Video:

DIRECTIONS:
In a large pot of heavily salted boiling water, cook the spaghetti to al dente according to the package directions. Reserve 1 cup of the pasta water, then drain the pasta.

Meanwhile, in a large skillet, cook the pancetta over medium-high heat until crisped, 7 to 9 minutes. Add the olive oil, then add the garlic, red pepper flakes, and black pepper and cook until fragrant, about 1 minute.

Add the lemon juice to the skillet, then toss in the drained pasta and toss to coat. Mix the Pecorino with Parmigiano grated cheese. Add in the cheese and toss, adding the pasta water, a little at a time, just to help the cheese coat the pasta. Add the arugula and toss until it wilts, about 1 minute. Season to taste with additional salt, lots of black pepper, lemon zest and red pepper flakes. Serve with more cheese, because well, duh.

Enjoy!

Where the magic happens

#ad @progresso Roasted Tomato Soup with Buttery Pa #ad @progresso Roasted Tomato Soup with Buttery Parm Croutons 🍅

It’s soup, stew, and braising season, which means the @progresso Chicken Broth that’s always stocked in my pantry is getting plenty of attention. First up: this creamy roasted tomato soup with buttery parm croutons. And by croutons, I mean a very reasonable excuse to eat butter-soaked, cheese-covered bread for dinner.

INGREDIENTS
Soup:
3 lbs Roma tomatoes, quartered
4 cups Progresso Chicken Broth, divided
1 large yellow onion, cut into wedges
1 head garlic, cloves peeled
3 tbsp olive oil
Kosher salt + coarsely ground black pepper
2 tbsp tomato paste
1 tbsp fresh thyme leaves + tender stems
8 oz creamy garlic + herb cheese
1 cup freshly grated Parmesan, plus more for serving
1 tsp red wine vinegar, plus more to taste
Fresh basil, for serving

Buttery Parm Croutons:
3 cups torn sourdough or whatever bread you have
4 tbsp salted butter, melted
1 tbsp olive oil
½ cup finely grated Parmesan
1 tsp garlic powder
Kosher salt + coarsely ground black pepper

DIRECTIONS
Preheat oven to 425°F with racks in the upper and lower thirds.
Toss tomatoes, onion + garlic on a rimmed sheet pan with olive oil, salt + pepper. Arrange tomatoes cut side up and roast 35–40 minutes, until tender and caramelized.
On a second sheet pan, toss bread with melted butter, olive oil, Parmesan, garlic powder, salt + pepper. Bake 12–15 minutes, tossing once, until golden and crisp.
Transfer roasted vegetables to a Dutch oven. While the sheet pan is warm, add 1 cup of the broth and scrape up those browned bits with a wooden spoon. Pour every bit into the pot. Liquid gold!
Add remaining 3 cups broth, tomato paste + thyme. Bring to a boil, then reduce heat and simmer, partially covered, for 10 minutes.
Remove from heat, add garlic + herb cheese, and immersion blend until smooth. Stir in Parmesan + vinegar. Taste and adjust salt, pepper + vinegar as needed.
Serve with a pile of buttery parm croutons, more Parmesan, torn basil + plenty of black pepper. Enjoy!
Sheet Pan Chicken Caesar Thighs with Crispy Parmes Sheet Pan Chicken Caesar Thighs with Crispy Parmesan Potatoes. 🍗🤤 Weak-night dinner, handled! A little @mariesdressing fridge staple doing some very heavy lifting for dinner. #ad

INGREDIENTS:
8 bone-in, skin-on chicken thighs
¾ cup Marie’s Caesar Dressing, divided
1 lemon, zested then cut into quarters
Kosher salt and coarsely ground black pepper
1½ pounds baby Yukon Gold potatoes, halved
2 tablespoons olive oil
¾ cup finely grated Parmesan, plus more for serving
Chopped fresh parsley, for serving

DIRECTIONS:
Preheat the oven to 450°F.
Pat the chicken thighs dry. Season with salt and pepper, then toss with ½ cup Marie’s Caesar Dressing and the zest of half the lemon. Set aside while you start the potatoes.
Add the potatoes to a large rimmed baking sheet. Toss with olive oil, salt, and pepper. Arrange the potatoes cut-side down and nestle the chicken thighs among the potatoes, skin-side up. Roast until the chicken is golden and cooked through and the potatoes are tender, about 30 minutes, then sprinkle the Parmesan generously over the potatoes.
Return to the oven until the Parmesan is golden and crispy around the edges, about 8-10 minutes or until the internal temp of the chicken reaches 165°F degrees.

Drizzle the Caesar dressing over the potatoes and around the chicken. Finish with parsley, more Parmesan, black pepper, and a squeeze of lemon.
