DIJON + HERB VINAIGRETTE

I could drink this dressing. It’s light, flavorful and downright delicious. It went perfectly with my Greek chickpea everything-but-the-kitchen-sink salad. The recipe is below, but as always, season to taste.

Ps, have you had the Trader Joe’s chickpeas?? OMG. I’m obsessed.

Ingredients
  

  • 1 tbsp Dijon mustard
  • 1/2 cup really good EVOO
  • Juice of 1 lemon
  • 1 clove garlic grated with a microplane
  • 1 tbsp freshly chopped dill
  • 1 tbsp freshly chopped Parsley
  • 1 tsp maldon salt
  • Black pepper
  • 1.5 tsp hot honey

Instructions
 

  • Combine all ingredients, and whisk
  • Season with salt and pepper to taste
  • Drizzle over your favorite salad
