DIJON + HERB VINAIGRETTE
I could drink this dressing. It’s light, flavorful and downright delicious. It went perfectly with my Greek chickpea everything-but-the-kitchen-sink salad. The recipe is below, but as always, season to taste.
Ps, have you had the Trader Joe’s chickpeas?? OMG. I’m obsessed.
Ingredients
- 1 tbsp Dijon mustard
- 1/2 cup really good EVOO
- Juice of 1 lemon
- 1 clove garlic grated with a microplane
- 1 tbsp freshly chopped dill
- 1 tbsp freshly chopped Parsley
- 1 tsp maldon salt
- Black pepper
- 1.5 tsp hot honey
Instructions
- Combine all ingredients, and whisk
- Season with salt and pepper to taste
- Drizzle over your favorite salad
