EASY THREE BEAN CHILI

EASY THREE BEAN CHILI 🫘 🌶️

I love chili szn with my whole heart, and couldn’t be happier that it’s finally here. This is a family recipe that I’ve been eating my entire life (thanks Mom) and have tweaked it to my own personal taste. It’s so good. Oh, and an unspoken mandatory side- Jiffy boxed cornbread mix and Trader Joe’s Elote Corn chips. 🙌🏼

Now, after I shared this last year, it caused some controversy. So… help me settle the debate. BEANS OR NO BEANS?! Let me know in the comments lol.

INGREDIENTS:
2 lbs ground beef
(1) 28 oz can of San Marzano peeled tomatoes
(1) 8 oz can of crushed tomatoes
1 tbsp tomato paste
8 cloves of garlic, chopped
(1) 15 oz can of black beans
(1) 15 oz can of kidney beans
(1) 15 oz can of white beans or navy beans
2.5 tbsp chili powder
1.5 tbsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp chipotle powder
2 tbsp kosher salt, plus more to taste
Cayenne, Optional
Toppings of your choice – I like shredded cheese, sour cream, red onion, avocado and Elote corn chips from Trader Joe’s 🤌🏼

DIRECTIONS:
Brown grown beef in a pot over medium heat along with garlic.

Once brown, drain the fat. Pour in crushed tomatoes, tomatoes paste and San marzano tomatoes. Using a wooden spoon, press down on tomatoes to crush up.

Rinse and drain beans then throw those in the pot, along with all of the spices. Cover, lower heat to a simmer and cook for an hour stirring occasionally.

Serve with your favorite toppings and enjoy!
