Spicy Baked Feta with Garlic, Tomato + Artichokes ✨

This warm, perfectly spicy, delicious appetizer, is one that you will make a dozen times and is so simple that you can do it in your sleep.

Wait – what’s a “Pantry Appetizer” you ask? It’s an appetizer comprised of ingredients that I have on my “Pantry Staples” list, that are mostly all shelf stable and things I always have in our pantry. These are PERFECT for when you need something thrown together last minute and don’t have time to run to the store. I actually have a whole series of “Pantry Entertaining” that you’re going to be hearing a lot about soon.

But first, back to the cheese. This is my take on the famous feta pasta that we all saw last year on TikTok. While you can certainly mix all of this up and pour into pasta, I prefer this as an app. Try it- and you’ll see why.

Spicy Baked Feta

Ingredients

  • Block of feta
  • Marinated artichokes
  • 6 cloves of garlic
  • Whole 2 cups of cherry tomatoes
  • 2 tbsp of EVOO
  • 1-2 tbsp of Trader Joe’s Italian Bamba Sauce, depending on preferred heat level
  • Salt + Pepper
  • Fresh thyme

Method

  1. Preheat the oven to 350, and place the Feta block in the middle of a baking-safe dish, set aside
  2. In a small bowl, mix artichokes, tomatoes, EVOO, Bamba sauce, salt and pepper to taste
  3. Spoon over the feta, making sure that the majority of the tomato + artichoke mixture is not on the feta
  4. Pour any remaining oil from the mixture over the top of feta. Sprinkle with another dash of salt, pepper and add in fresh thyme
  5. Pop the baking dish into the oven for 35-40 minutes.
  6. I like to broil for 2 minutes (WATCH CAREFULLY!!!!) or so for some added color
  7. Remove from the oven and serve with baguette slices or crackers

If dinner has to happen but I refuse to dirty every pan in my kitchen... this one-pot chicken & orzo is the answer. It’s packed with artichokes, olives, feta, fresh herbs, and so much flavor (thanks to Knorr Granulated Chicken Bouillon). 

Save this one for the next “what’s for dinner?” emergency. ✨

INGREDIENTS:
1 teaspoon Knorr Granulated Chicken Bouillon 
3 tablespoons olive oil
1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon dried oregano
1 teaspoon kosher salt, plus more to taste
Coarsely ground black pepper
1 (14-ounce) can quartered artichoke hearts, drained
3 garlic cloves, finely chopped
Pinch of crushed red pepper flakes
½ cup dry white wine
4 cups chicken broth
8 ounces orzo (1¼ cups)
½ cup pitted green olives, coarsely chopped
½ cup finely chopped dill or parsley, plus more for serving
2 teaspoons finely grated lemon zest plus 2 teaspoons lemon juice, plus more to taste
½ cup crumbled feta cheese

Pitcher of Rosé Margaritas ✨ How do you prefer y Pitcher of Rosé Margaritas ✨ 

How do you prefer your marg?? On the rocks or frozen?!

INGREDIENTS:
1 bottle of Rosé
10 ounces blanco tequila
8 ounces lime juice 
6-8 ounces agave syrup (taste as you go to get it where you like it!)

DIRECTIONS:
Add rosé and tequila into a pitcher. Stir together lime juice and agave syrup, then add into the pitcher. Throw in some ice, then stir again. Rim your glasses with agave and sugar (or salt if you prefer.) Pour into prepared glasses and enjoy!
