Pad Thai Inspired Popcorn

Okay friends, it’s back. My couch snack + show pairing series has returned, and we’re starting off strong—like, bold flavor, addictive crunch, zero leftovers kind of strong. I’ve been testing this one behind the scenes and let me just say: if Pad Thai and a popcorn bowl had a baby, it would be this. And I’m not waiting for Sunday’s finale to tell you—this one’s a keeper.

Whether you’re binge-watching your comfort show or tuning in for the White Lotus season 3 finale, this Pad Thai-inspired popcorn is the ultimate savory-sweet snack you didn’t know you needed.

What to Pair It With:

You didn’t think I’d leave you without a drink, did you? This snack was made to be enjoyed with the Thai Basil Gimlet (get the recipe here).

Ingredients

  • 8 cups popped popcorn, I cheat here and make microwave popcorn but do your thing!
  • 1.5 tbsp coconut oil, melted
  • 1 tbsp brown coconut sugar
  • 1 tsp lime zest, plus more for garnishing
  • 1 tbsp lime juice
  • 1/2 tsp soy sauce or fish sauce
  • 1 tsp Thai chili powder
  • 1/4 tsp ground ginger
  • 1/2 tsp garlic powder
  • Pinch of kosher salt
  • 1/4 cup peanuts, roughly chopped
  • 1 tbsp chopped cilantro
  • Spicy sweet chili crisp

Method

  1. In a bowl, mix melted coconut oil (or butter) with coconut sugar, lime zest, lime juice, and soy sauce (or fish sauce.)
  2. Whisk well until the coconut sugar has dissolved
  3. Working in batches, pour a little at a time and mix the popcorn well. Taste as you go to ensure you don’t pour too much
  4. In a small bowl, mix Thai chili powder, ground ginger, garlic powder and salt
  5. Again, work in batches to coat, mix with the popcorn, and repeat
  6. Garnish with chopped peanuts, cilantro, and a little extra lime zest
  7. Top with as much chili crisp as you want and pair with the Thai Basil Gimlet

If dinner has to happen but I refuse to dirty every pan in my kitchen... this one-pot chicken & orzo is the answer. It’s packed with artichokes, olives, feta, fresh herbs, and so much flavor (thanks to Knorr Granulated Chicken Bouillon). 

Save this one for the next “what’s for dinner?” emergency. ✨

INGREDIENTS:
1 teaspoon Knorr Granulated Chicken Bouillon 
3 tablespoons olive oil
1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon dried oregano
1 teaspoon kosher salt, plus more to taste
Coarsely ground black pepper
1 (14-ounce) can quartered artichoke hearts, drained
3 garlic cloves, finely chopped
Pinch of crushed red pepper flakes
½ cup dry white wine
4 cups chicken broth
8 ounces orzo (1¼ cups)
½ cup pitted green olives, coarsely chopped
½ cup finely chopped dill or parsley, plus more for serving
2 teaspoons finely grated lemon zest plus 2 teaspoons lemon juice, plus more to taste
½ cup crumbled feta cheese

How do you prefer your marg?? On the rocks or frozen?!

INGREDIENTS:
1 bottle of Rosé
10 ounces blanco tequila
8 ounces lime juice 
6-8 ounces agave syrup (taste as you go to get it where you like it!)

DIRECTIONS:
Add rosé and tequila into a pitcher. Stir together lime juice and agave syrup, then add into the pitcher. Throw in some ice, then stir again. Rim your glasses with agave and sugar (or salt if you prefer.) Pour into prepared glasses and enjoy!
