My love language: cheese, words of affirmation, and throwing a great dinner party. ???️

I’m so excited about this series! Dinner parties are my love language, but we ALL know that hosting can go from 0 to STRESSFUL in 2 seconds. That’s why I have a hard rule that I always follow: if I have one dish on the menu that requires cooking after my guests arrive, then every other dish needs to be able to be made ahead. It takes away a huge amount of stress so you can focus on one singular dish. The best part? I made this HOURS ahead of time.

I opted for a simple Heirloom Tomato + Burrata Caprese with Sourdough toasts and Caviar with a chip flight + accoutrements. Impressive dishes don’t have to be complicated. It’s. All. In. The. Presentation. ?? I cut up wedges of tomato, vs slices to not only be beautiful presentation wise but it also was easy for my guests to scoop up and eat on toast.
Now, you absolutely do NOT have to be serving caviar, but choose something that doesn’t have to be cooked, and that will take you a few seconds to throw together. Examples: a small cheese plate (talking 1-2 cheeses, maybe charcuterie, olives & nuts?), chips & guac, a crudités plate with hummus – even marinated olives and nuts with olive oil & bread! See what I mean? Those are all examples of make ahead apps that are fresh, delicious and elevated.

Ingredients

For the Heirloom Tomato Burrata Caprese
  • 2 Heirloom Tomatoes
  • 2 Burrata Balls
  • Fresh basil, sliced
  • Good Olive Oil
  • Flakey Salt + Cracked Black Pepper
  • Sourdough slices

Method

  1. Cut tomato into wedges and arrange on a platter
  2. Tear open Burrata and scatter among the tomatoes
  3. Sprinkle basil over the top with some flaky salt and pepper, then drizzle olive oil
  4. To make toast, preheat oven to 400 degrees
  5. Drizzle each slice with a little olive oil and pop in the oven for 6-8 minutes.
  6. Note: If making ahead of time, arrange the tomatoes & Burrata on the platter, then wrap and place into the fridge. Before your guests arrive, complete the above steps.

If dinner has to happen but I refuse to dirty every pan in my kitchen... this one-pot chicken & orzo is the answer. It’s packed with artichokes, olives, feta, fresh herbs, and so much flavor (thanks to Knorr Granulated Chicken Bouillon). 

Save this one for the next “what’s for dinner?” emergency. ✨

INGREDIENTS:
1 teaspoon Knorr Granulated Chicken Bouillon 
3 tablespoons olive oil
1½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
1 teaspoon dried oregano
1 teaspoon kosher salt, plus more to taste
Coarsely ground black pepper
1 (14-ounce) can quartered artichoke hearts, drained
3 garlic cloves, finely chopped
Pinch of crushed red pepper flakes
½ cup dry white wine
4 cups chicken broth
8 ounces orzo (1¼ cups)
½ cup pitted green olives, coarsely chopped
½ cup finely chopped dill or parsley, plus more for serving
2 teaspoons finely grated lemon zest plus 2 teaspoons lemon juice, plus more to taste
½ cup crumbled feta cheese

Pitcher of Rosé Margaritas ✨ How do you prefer y Pitcher of Rosé Margaritas ✨ 

How do you prefer your marg?? On the rocks or frozen?!

INGREDIENTS:
1 bottle of Rosé
10 ounces blanco tequila
8 ounces lime juice 
6-8 ounces agave syrup (taste as you go to get it where you like it!)

DIRECTIONS:
Add rosé and tequila into a pitcher. Stir together lime juice and agave syrup, then add into the pitcher. Throw in some ice, then stir again. Rim your glasses with agave and sugar (or salt if you prefer.) Pour into prepared glasses and enjoy!
